Made in Extremadura, Spain, Ibores is a goat's cheese milk rubbed with paprika and olive oil - like many Iberian cheeses are. It owes its name to the Ibor mountains in this wild region. This artisan cheese is hard but creamy, slightly acid and salty, but buttery on the tongue and a pleasant aroma of goat's milk. Perfect with some fresh bread and good wine, and excellent on the cheese board. |
