The Borde family has been an expert in mushroom production since its birth in 1920. They carefully sort and pack their mushrooms by hand in a state of the art facility in France. The oyster (pleurotus ostreatus), is a robust and rustic mushroom that is harvested in the fall, growing wild on trees. A very pale grey color, it has a scallop shaped cap, and beautiful opalescence. It emanates an aroma reminiscent of anise, very fruit-like and winy at times, which it translates into cooked dishes. They are sweet, and tender, and extremely flavorful, cook fairly quickly, and especially spectacular in stir-fry plates. |
