This cheese first appeared 2,000 years ago in Franche-Comte. Another kind of cheese, Metton, is used in Cancoillotte's creation. Metton is coagulated and melted, in which salt and butter are added. It comes from cow's milk and has a simply delicious taste that will agree with anyone. This pale, yellow cheese is creamy and salty and is very popular in France.
