The oyster mushroom (pleurotus ostreatus), is a robust and rustic mushroom that is harvested in the fall, growing wild on trees. A very pale grey color, it has a scallop shaped cap, and beautiful opalescence. It emanates an aroma reminiscent of anise, very fruit-like and winy at times, which it translates into cooked dishes. They are sweet, and tender, and extremely flavorful, cook fairly quickly, and especially spectacular in stir-fry plates. This bag includes a whole pound, ideal for big events, and great to have at hand, as they will keep for year. Store in a cool, dry place.
